Tonka beans are the seeds of the Kumaru tree and are used in confectionery, distillery and perfume industry. A few peels are enough to release its intense aroma. Tonka beans are small, black, wrinkled, and they have a floral aroma. Their flavour reminds nutmeg and bitter almond. 

How to use Tonka beans

Just a Tonka bean is enough to flavour large amounts e.g. of ice cream. Grate them over chocolate soufflés, ice creams, pancakes, chocolate pies, creams, pastries for cookies, cakes, buns, in iced juices. Flavour mashed potatoes, soups and white meats.
