The Aleppo Pepper or Pul Biber, is a middle eastern variety of the hot pepper which is partially dried, de-seed and then crushed or coarsely ground after rippening to a deep burgundy colour. The spice's name originates from the Aleppo city, located along the Silky road in northern Syria.

 Pul biber is slightly milder than the common red pepper flakes and has a salty undertone and a raisin-like flavor. It is most commonly used in meat dishes and traditional turkish meze dishes which accompany alcoholic drinks.
