Besides its use as a spice in many dishes, it has been used traditionally by the Indians as a fold medicine for centuries. The prime reason for using this rhizoma so excessively was due to beliefs that it protected against tumor appearances.
When not used fresh, the rhizomes are boiled for about 30-45 minutes and then dried in hot ovens, after which they are ground into a deep-orange-yellow powder commonly used as a spice in almost all Asian cuisines. Turmeric is also very usually used as a dye, due to the color's deep staining property. One of turmeric's active ingredients is curcumin, which has a distinctly earthy, slightly bitter and hot, peppery flavor and mustardy smell.
It is the main ingredient used in curry. It is used mixed in other condiments, in pickled vegetables, poultry, rice, fish, eggs and even desserts like ice cream, yogurt, cakes, orange juice, biscuits etc. However, regular use of the spice can cause stomach sensitivity.
Traditionally, it was used instead of saffron because of the spice's strong, golden-yellow color.
Caution : It has been reported that turmeric can sometimes cause skin rashes. Users are adviced to avoid excessive skin application before being exposed to sunlight.
