 Paprika is a spice made from air-dried fruits of the chilly pepper family. Sweet paprika is mostly composed of the pericarp and the seeds are removed, thus resulting in the spice acquiring its sweet taste. It originated in central Mexico and it was brought to Spain in the 16th century. It is produced and used in cooking all around the world to flavor and colour the food.

As a spice, it contains amounts of vitamin C greater than that of citrus fruits and high quantities of salicylic acid, the natural compound of aspirin.

Paprika is widely used in Mexican, Spanish and Indian cuisines. In Hungary, it has been chosen as their national spice. It imputes a vibrant color and a delightful taste to the food. It is very suitable in meat dishes, pasta, sauces, sausages and soup.
