The arils surrounding the nutmeg seed are the source of the spice Mace.. Mace has a light orange colour, a sweet and at the same time slightly peppery aroma and its flavour is very close to that of nutmeg but it is more discreet and mild. A small amount of it, just a pinch, is enough to make its presence felt in the dishes and to flavour them.


In which recipes is masis used?

Mace is used in both cooking and confectionery. It flavours white creams such as rice pudding, mashed potatoes and white sauces. It is suitable for soups, marinades and poultry. We find it in drinks, liqueurs and wines.
