 Sumac is a Middle Eastern spice with a bright burgundy-reddish color, which is derived from the species of the Rhus Coriaria tree. The tree grows in subtropical and temperate regions throughout the world and it can be generally found anywhere in the Mediterranean region.

Sumac is one of the very basic and most common condiments of the Eastern, oriental cuisine. It adds a tart, lemony taste to various dishes including salads or meat. In Arab cuisine it is used as a garnish on their meze dishes and hummus and in Persian and Kurdish cuisine the spice is added to rice or kebab. In Jordanian andTurkish cuisines it is used in kebab as well as in lahmacun. Also, these small red drupes are used in the Za'tar spice mixture.

Generally, it can be used to substitute lemon or vinegar due to its sour taste. It goes very well in meat patty, fish, meat, seafood, chickpeas, soups and salads. It also makes as a great garnish with yogurt, chilli powder, cumin, coriander and parley. Mixing it with olive oil gives us a thich reddish paste which can be used to marinate bread or meat before grilling.
