Glutamate is the sodium salt of glutamic acid, in white crystalline form (like white fine salt) has a special, salty taste and is used by the food industry as a flavor enhancer.

It is present in almost all foods to enhance their taste, we will find it in dairy products, meat, poultry, fish, chips, shrimp, drips, dressings, cold cuts, canned food, ready-made sauces, vegetable cubes, ready-made soups and purees.

Glutamate is more suitable for salty and sour flavors than sweet. It works as a food improver but that does not mean that if a recipe fails, glutamate will correct it or itwill improve the taste. It will not replace bad taste with good, but it improves the flavors of already good recipes . Restaurant chefs use it a lot.
