It has a strong woody taste that becomes more intense after cooking. It is cultivated in more than seventy countries and is one of the most common and widely consumed mushrooms in the world. It comes from meadows in Europe and North America.
First we have to soak them usually for 30 minutes in hot water. Their texture after 30 minutes is chewy and a little hard. If we want them to soften completely, we have to soak them for 2-4 hours. We do not throw away the soaked water, but we use it in our recipe. eg throw it in risotto or pasta. This water can replace chicken broth. We can also soak them in wine or brandy.
