Savory, also known as satureja is a heb related to rosemary and thyme. It is mostly a summer herb, one of the most popular culinary herbs widely employed in the eastern European and American cuisines. Savory is a perennial herb and can be categorized in summer and winter savory .

Both summer and winter savory are used to flavor food. Summer savory is preffered by cooks but as an annual is only available in summer; winter savory is an evergreen perennial. Savory plays an important role in Georgian, Bulgarian and Italian cuisine, particularly when cooking beans. Savory taste is slightly peppery and tangy, similar to marjoram. This herb has very good blending qualities with other fellow herbs. In order to keep the flavor and aroma intact, savory is generally added at the final moments in cooking, because prolonged exposure to heat can cause the herb's volatile oils to evaporate. It can be used fresh or dried in salads, in seasoning soups and sauces and alongside other spicy items, it can be used to marinate chicken, fish and meat recipes. Also, savory herbal tea is a popular health drink.
