Black cardamom is also known as hill cardamom, Indian cardamom, winged cardamom etc. It looks like the well-known green cardamom, but it is not used in the same recipes. Black cardamom looks like a small bean, it’s wrinkled, of dry texture, black coloured, it has a cool camphor-like aroma and a woody taste with a slightly smoky aftertaste.

Black cardamom is a strong, extremely aromatic spice reminiscent of fennel and mint. You will rarely find it in sweet recipes, but mostly in casserole ones. Break it, open the cardamom beans, take out their seeds and add them to your dishes and chocolate and tea drinks. 

In which recipes is black cardamom used?

Black cardamom goes very well with soups, white sauces, pilaf, marinades, legumes, shrimps, meat and poultry. It adds taste to salads with potatoes, green leafy vegetables and legumes. Use black cardamom to add an aromatic flavour to pastries, meat marinades, dips and dressings.
