There are about sixty species of the plant Amaranthus. Amaranth takes its name from the striking fact that its flowers, when cut and dried, retain their vibrant colours and look like being fresh. Also, amaranth gives tiny, hard, blond seeds that look like mustard ones and are used in various recipes. These seeds can be soaked, boiled, or baked.

When boiled, amaranth seeds become sticky. They go well with breakfast cereals such as quinoa, buckwheat and oats. For extra flavour add spices such as cinnamon, or add them to muesli along with seeds, superfoods and nuts. Amaranth seeds are suitable for all soups and are used as toppings in salads and pies. 

In which recipes amaranth is used

Use amaranth in risottos, soups, salads, muesli, or baked goods. Boil it and pour honey over it, add it to cereals with vegetable drinks and nuts. Add amaranth to salads, cereals and pasta.
