Xylitol is a sweetener of plant origin, it is an alcohol that we get from the fiber of the birchwood. It has a crystalline white form, cool, sweet and light taste and finds uses in pastry recipes instead of sugar. It tastes similar to sugar, has fewer calories and is found in products that contain little or no sugar, such as chewing gum and candy, as well as toothpastes and mouthwashes.

Xylitol when heated loses its sweetening intensity and does not caramelize like white sugar. Now, if we want to use xylitol in a recipe instead of the sugar, we consider that we have to follow xylitol recipes in order for the delicacies we make to be successful.
