Mahleb or mahlab is an aromatic spice derived from the seeds of a wild spices of cherry called Mahaleb or St. Lucie cherry tree. The spice's taste is a combination of bitter almond and cherry and it is widely used in confectionery. In Greek cooking it is the characteristic flavoring of Christmas cake and pastry recipes. It is also used in cakes and cookies such as Christmas vasilopita and Easter tsoureki breads. However, it is very rich in taste and should be used cautiously.
