Urfa or Isot biber or pepper is a dried Turkish chili pepper of the Capsicum annuum spiece that is cultivated in the Urfa region in Turkey. It is described to have a smokey, sultry, raisin like taste and it pairs perfectly with hearty vegetables, pungent cheeses and braised meats. It is not as hot a pepper as others of its species, but it appears to have a mild spiciness at first, but it builds in heat over the course of the meal.

Isot pepper is moist and dark colored. The procedure that is followed to dry the plant is this: the peppers are dried in the sun, during the autumn season and then wrapped up tightly during the night. The night process is called “sweating” and works to infuse the dried flesh with any remaining moisture present. The result is an appearance ranging from deep purple to a dark, purplish black.
