The genus Agaricus is an edible genus of mushrooms and can have two colors, brown or white. Depending on its color, it has a different name. It has a strong woody taste that becomes more intense after cooking. It is cultivated in more than seventy countries and is one of the most common and widely consumed mushrooms in the world. It comes from meadows in Europe and North America.

How to use dried white mushrooms in recipes

First we have to soak them usually for 30 minutes in hot water. Their texture after 30 minutes is chewy and a little hard. If we want them to soften completely, we have to soak them for 2-4 hours. We do not throw away the soaked water, but we use it in our recipe. eg throw it in risotto or pasta. This water can replace chicken broth. We can also soak them in wine or brandy.

With the dried mushrooms we make:

  • Rice with vegetables
  • Mushroom pies
  • Mushroom soups
  • Mushroom meatballs
  • Frying pans
  • Omelettes
  • Sauces for meat, pasta and rice
  • We cook them with meat in the oven
  • We cook them with pasta, spaghetti, tagliatelle, rigatoni .

We put them in the blender and make them powder which we throw in sauces, soups, or omelets.
