Ammonia is a chemical compound that contains nitrogen and hydrogen. It is caustic, it has a crystalline form (like white sugar), white color and its smell is characteristic, intense and penetrating that when we inhale it plain, it is annoying, it causes us to cough.

Ammonia is used by the food industry, pastry and bakery as a leavening agent in doughs and is activated when heated and behaves like soda and baking powder. Its annoying smell disappears after cooking our dishes. A minimal amount of it is enough (1/2 tbsp) to make our sweet gastronomic creations delicious and crunchy. For example, most Easter bagels recipes require ammonia.

Use ammonia in recipes for pastries that ask for it to make cakes, crackers, pie, cookies, buns, pancakes, muffins, donuts, cookies, and almost all baked goods.
